Roasted Turnip

Ingredients:

  • 2 cups turnips peeled and cubed
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions:

  1. Preheat oven to 400*F
  2. Cut off both ends and peel turnips.
  3. Cut into 1/2-inch slices, then cut each slice into 1/2-inch-thick cubes.
  4. Place the turnips in a medium bowl and toss with the olive oil.
  5. Spread the turnips onto baking sheet and season with salt, pepper, and other desired spices.
  6. Roast, tossing halfway through, for about 30 minutes or until light brown and fork tender.
  7. Use parsley or green onion for garnish.
