Dilly Beans

Ingredients:

  • 1 lb trimmed green beans
  • 1-2 garlic cloves
  • 2 cups water
  • 1/4 cup apple cider vinegar
  • 1 1/2 tbsp salt
  • 1 tbsp granulated sugar
  • 3 sprigs dill
  • Optional: red pepper flakes, mustard seed, peppercorns

Instructions:

  1. Prepare brine. Add water, vinegar, sugar, salt to a saucepan, boil on high heat, until the sugar and salt are dissolved. Set brine aside to cool.
  2. Wash and trim beans, then arrange them in the jar. Add garlic cloves, springs of fresh dill, and spices.
  3. Pour brine over the beans. Tap the jar on the counter to dislodge air bubbles, then fill to the top of the jar. Put the lid on and wait.
  4. Wait 3 days to 1 week to try your beans! Consider pickling other veggies to combat food waste!
