Dilly Beans
Ingredients:
- 1 lb trimmed green beans
- 1-2 garlic cloves
- 2 cups water
- 1/4 cup apple cider vinegar
- 1 1/2 tbsp salt
- 1 tbsp granulated sugar
- 3 sprigs dill
- Optional: red pepper flakes, mustard seed, peppercorns
Instructions:
- Prepare brine. Add water, vinegar, sugar, salt to a saucepan, boil on high heat, until the sugar and salt are dissolved. Set brine aside to cool.
- Wash and trim beans, then arrange them in the jar. Add garlic cloves, springs of fresh dill, and spices.
- Pour brine over the beans. Tap the jar on the counter to dislodge air bubbles, then fill to the top of the jar. Put the lid on and wait.
- Wait 3 days to 1 week to try your beans! Consider pickling other veggies to combat food waste!
