Ukrainian Beet Soup (Barszcz ukrainski)
Ingredients:

1 large onion, cut into four chunks

4 Beets, cubed

1 can tomatoes, crushed

1 can kidney Beans
-
4 Russet Potatoes, cubed

1/2 Head of Cabbage, shredded

2 - 4 Carrots, cubed

1 TBS Butter or Vegan Butter
-
3 Bay Leaves
-
1 TBS Sugar
-
Juice from one Lemon or Lime (whichever you have)

2 cubes veggie broth (our choice is Knorr from KTA)

6 or move cups of water
Directions:
- Heat oil in a pan. When hot, add onion

Fry until onion translucent

Add 3 bay leaves
-
Add salt
-
Add potatoes, beets, and carrots, and fry for a few minutes

Add 2 cups of water and boil for a few minutes until the veggies are getting soft

Add the cabbage, can tomatoes, and can of beans
-
Heat the remaining water and dissolve the veggie broth cubes
-
Add the broth to the pot and bring to a boil
-
Reduce heat and simmer for another 15 minutes

Add the lemon or lime juice
-
Add 1 TBS sugar, stir well and heat for several more minutes

Top with sour creme or vegan sour creme
