'Uala with Coconut Milk
Ingredients:

3 to 4 purple Okinawa sweet potatoes

1/3 cup coconut milk

4 cloves garlic, minced

1/3 teaspoon sea salt, or to taste

Dash black pepper, or to taste
Directions:

Peel and quarter the potatoes.

In a medium saucepan (pot), boil the potatoes in water until tender, (this will take about 45 minutes).

To make sure that they are soft, you can check it using a fork or toothpick.

Drain the water and mash the potatoes with coconut milk.

You can add more coconut milk until the desired consistency is reached.

Add garlic, salt, and pepper to taste. Enjoy!
