Turnip Hash

Ingredients:

  • 2 large turnips (peeled and diced)
  • 2 medium potatoes (peeled and diced)
  • 1 onion (diced)
  • Oil (olive, vegetable oil, avocado oil, etc)
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • Salt and pepper to taste
  • OPTIONAL: fresh herbs like parsley or thyme

Directions:

Sauté the vegetables:

  1. Add the diced onion and garlic to the skillet
  2. Cook until the onion is translucent, about 3-4 minutes
  3. Add the diced turnips and potatoes to the skillet
  4. Be sure to stir and coat with oil

Cooking the Hash: 

  1. Season with salt and pepper
  2. Cook the vegetables over medium heat
  3. Stir occasionally until the turnips and potatoes are tender and browned (about 15-20 minutes)

Serve: Garnish with fresh herbs if desired and serve while still hot
