Turnip Hash
Ingredients:
- 2 large turnips (peeled and diced)
- 2 medium potatoes (peeled and diced)
- 1 onion (diced)
- Oil (olive, vegetable oil, avocado oil, etc)
- 2 cloves garlic, minced
- 2 tbsp olive oil or butter
- Salt and pepper to taste
- OPTIONAL: fresh herbs like parsley or thyme
Directions:
Sauté the vegetables:
- Add the diced onion and garlic to the skillet
- Cook until the onion is translucent, about 3-4 minutes
- Add the diced turnips and potatoes to the skillet
- Be sure to stir and coat with oil
Cooking the Hash:
- Season with salt and pepper
- Cook the vegetables over medium heat
- Stir occasionally until the turnips and potatoes are tender and browned (about 15-20 minutes)
Serve: Garnish with fresh herbs if desired and serve while still hot
