Stuffed Tomatoes
Ingredients:
- 4 Tomatoes
- 1 cup cooked quinoa
- 1/2 cup cucumbers
- 1/2 cup bell pepper 1
- 1/4 cup red onion
- 2 tbsp parsley
- 2 tbsp mint
- 2 tbsp lemon juice
- 2 tbsp olive oil
- Salt and Pepper
Directions:
- Cut the tops off the tomatoes and scoop out the flesh with a spoon, leaving the shells intact.
- In a mixing bowl, combine the quinoa, cucumber, bell pepper, red onion, parsley, mint, lemon juice, olive oil, salt, and pepper. Mix well.
- Stuff the quinoa mixture into the hollowed-out tomatoes.
- Serve immediately or refrigerate until ready to serve.
