Stuffed Tomatoes

Ingredients:

  • 4 Tomatoes
  • 1 cup cooked quinoa
  • 1/2 cup cucumbers
  • 1/2 cup bell pepper 1
  • 1/4 cup red onion
  • 2 tbsp parsley
  • 2 tbsp mint
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and Pepper

Directions:

  1. Cut the tops off the tomatoes and scoop out the flesh with a spoon, leaving the shells intact.
  2. In a mixing bowl, combine the quinoa, cucumber, bell pepper, red onion, parsley, mint, lemon juice, olive oil, salt, and pepper. Mix well.
  3. Stuff the quinoa mixture into the hollowed-out tomatoes.
  4. Serve immediately or refrigerate until ready to serve.
