Carrot Cake in a Mug

Ingredients:

  • 4 tbsp all-purpose flour
  • 2 tbsp sugar
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • Pinch of salt
  • 3 tbsp choice of milk
  • 2 tbsp oil
  • 1/4 tsp vanilla extract
  • 2 tbsp grated carrot
  • 1 tbsp walnuts or pecans
  • Choice of frosting

Directions:

  1. In a microwave safe nug, mix flour, sugar, baking powder, cinnamon, nutmeg and salt.
  2. Fold in grated carrot and nuts
  3. Microwave for 1 min and 30 secs to 2 minutes or until cake is set
  4. Let cake cool a bit for smothering in frosting
