Carrot Cake in a Mug
Ingredients:
- 4 tbsp all-purpose flour
- 2 tbsp sugar
- 1/4 tsp baking powder
- 1/4 tsp cinnamon
- Pinch of nutmeg
- Pinch of salt
- 3 tbsp choice of milk
- 2 tbsp oil
- 1/4 tsp vanilla extract
- 2 tbsp grated carrot
- 1 tbsp walnuts or pecans
- Choice of frosting
Directions:
- In a microwave safe nug, mix flour, sugar, baking powder, cinnamon, nutmeg and salt.
- Fold in grated carrot and nuts
- Microwave for 1 min and 30 secs to 2 minutes or until cake is set
- Let cake cool a bit for smothering in frosting
