Hawaiian Tofu and Watercress Salad

Ingredients:

Salad
  • 1 bunch watercress, washed and cut into 1 ½ inch lengths
  • 1 bunch bean sprouts
  • 1 packet firm or extra firm tofu, drained and cubed
  • 1 tomato diced
  • 1/2 cup minced green onion
Dressing
  • 1 tablespoon toasted sesame oil
  • 1 clove garlic, pressed or minced
  • 1/2 teaspoon grated fresh ginger
  • 1/3 cup shoyu or to taste
  • 2 teaspoons sesame seeds (optional)
  • 1 tablespoon sugar (optional)
  • Hawaiian or Himalayan pink salt to taste

Directions:

  1. Clean, cut and mix together salad ingredients. Mix dressing separately then add to taste.
  2. Optional: add tuna
