Chimichurri with Kalo Fritters
Ingredients:

1 1/2 cup fresh flat-leaf parsley

2 cloves garlic

2 tablespoons red wine vinegar

1 tablespoon lime juice or to taste

1 teaspoon dried oregano or 1 TBS fresh

1/4 teaspoon red pepper flakes or 1/2 Hawaiian Chili Pepper or more for desired heat level

1/2 cup olive oil

Salt and pepper to taste
Directions:
- Add all the ingredients to a food processor. Pulse until desired consistency. We like to keep it slightly chunky. Texture is important.

Taste and adjust seasonings.

Peel your kalo (taro) with gloves and cut into 1/2” chunks.

Cook until done and soft

Fry the kalo cubes until golden brown

Place a spoonful of chimichurri into a bowl and top with fried kalo cubes. Enjoy!
