Chimichurri with Kalo Fritters

Ingredients:

  • 1 1/2 cup fresh flat-leaf parsley
  • 2 cloves garlic 
  • 2 tablespoons red wine vinegar 
  • 1 tablespoon lime juice or to taste
  • 1 teaspoon dried oregano or 1 TBS fresh
  • 1/4 teaspoon red pepper flakes or 1/2 Hawaiian Chili Pepper or more for desired heat level
  • 1/2 cup olive oil
  • Salt and pepper to taste

Directions:

  1. Add all the ingredients to a food processor. Pulse until desired consistency. We like to keep it slightly chunky.  Texture is important.
  2. Taste and adjust seasonings.
  3. Peel your kalo (taro) with gloves and cut into 1/2” chunks.
  4. Cook until done and soft
  5. Fry the kalo cubes until golden brown
  6. Place a spoonful of chimichurri into a bowl and top with fried kalo cubes. Enjoy!
