Asian Cucumber Salad

Ingredients:

  • 1 Bag Keiki Cukes or other cucumbers, approximately 2 lbs
  • 1/4 inch fresh ginger peeled and minced
  • 1 clove garlic, minced
  • 1/8 cup rice vinegar
  • 1/2 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1/2 tbsp maple syrup
  • crushed red pepper to taste
  • sesame seed

Directions:

  1. Thinly slice the cucumbers
  2. Place cucumbers into a colander and sprinkle with salt.
  3. Leave resting for 30 minutes
  4. Rinse the cucumbers and gently pat dry with a clean towel.
  5. Add ginger, garlic, rice vinegar, tamari, sesame oil, maple syrup and crushed red pepper to a food processor and blend until smooth.
  6. Pour the dressing over the cucumbers and gently mix.
  7. Sprinkle with sesame seeds and enjoy!
