Asian Cucumber Salad
Ingredients:

1 Bag Keiki Cukes or other cucumbers, approximately 2 lbs

1/4 inch fresh ginger peeled and minced

1 clove garlic, minced

1/8 cup rice vinegar

1/2 tbsp soy sauce

1 tbsp toasted sesame oil

1/2 tbsp maple syrup

crushed red pepper to taste

sesame seed
Directions:
- Thinly slice the cucumbers

Place cucumbers into a colander and sprinkle with salt.

Leave resting for 30 minutes

Rinse the cucumbers and gently pat dry with a clean towel.

Add ginger, garlic, rice vinegar, tamari, sesame oil, maple syrup and crushed red pepper to a food processor and blend until smooth.

Pour the dressing over the cucumbers and gently mix.

Sprinkle with sesame seeds and enjoy!
