Yummilicious No-Bake Energy Balls

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup peanut or other nut butter
  • 2 tbsp flaxseed meal, optional
  • 2 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 cup cocoa powder (can substitute with chocolate chips)
  • 1/4 cup shredded unsweetened coconut

Directions:

  1. Put all the ingredients into a large bowl.
  2. Mix with a spoon or spatula until it forms a firm dough.
  3. Scoop a tablespoon of dough and roll between the palms of your hands. The dough balls should be about 1 1/2” in diameter.
  4. Place onto a parchment-lined plate and repeat for remaining dough.
  5. Optional: roll each ball in shredded coconut.
  6. Chill in an airtight container until serving.
