Walnut Meat Tacos

Instructions
- Toast the walnuts in a pan over a low heat for 6-8 minutes or until they smell toasted by not burnt.
- Peel and chop the garlic and add to the walnuts
- Add smoked paprika, chilli powder and ground cumin.
- Stir the mixture and cook for 2 minutes.
- Put the mixture into a food processor along and add the balsamic vinegar, maple syrup, sun-dried tomatoes and a pinch of salt. Process until the mixture has a mince-like texture.
- Mix drained corn and black beans together and add the juice from half of the lime
- Mash the avocados in a bowl and add the juice of the other half of the lime and the cilantro.
- Warm up the tortillas in a pan
- Assemble the tacos with the walnut mixture, bean mixture and top with salsa and avocado mash. Enjoy!
