Walnut Meat Tacos

 

    Ingredients

    • 14 oz walnuts

    • 1 tbsp smoked paprika

    • 2 tsp chilli powder

    • 1.5 tbsp ground cumin

    • 3 garlic cloves

    • 2 tsp balsamic vinegar

    • 2 tsp maple syrup

    • 10 sun-dried tomatoes, chopped

    • salt

    • 1 can corn

    • 1 can black beans

    • salt & pepper

    • 1 Lime

    • Handful of Cilantro, chopped

    • salsa

    • 2 avocados

    • Corn or flour tortillas


     

    Instructions

    1. Toast the walnuts in a pan over a low heat for 6-8 minutes or until they smell toasted by not burnt.
    2. Peel and chop the garlic and add to the walnuts
    3. Add smoked paprika, chilli powder and ground cumin.
    4. Stir the mixture and cook for 2 minutes.
    5. Put the mixture into a food processor along and add the balsamic vinegar, maple syrup, sun-dried tomatoes and a pinch of salt. Process until the mixture has a mince-like texture.
    6. Mix drained corn and black beans together and add the juice from half of the lime
    7. Mash the avocados in a bowl and add the juice of the other half of the lime and the cilantro.
    8. Warm up the tortillas in a pan
    9. Assemble the tacos with the walnut mixture, bean mixture and top with salsa and avocado mash. Enjoy!
