Ulu Fritters
Ingredients:
- 2 cups thawed and mashed 'ulu (breadfruit)
- 1/2 cup all-purpose flour (or a gluten-free alternative)
- 1/4 cup chopped green onions or herbs (like cilantro or parsley)
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg (or egg replacement)
- 1/4 cup milk or alternative milk
- Optional: spices (e.g., paprika, garlic powder) for extra flavor
- Oil for frying (e.g., vegetable oil or coconut oil)
Directions:
Prepare the 'Ulu:
- Thaw and mash the 'ulu until it reaches a smooth consistency (you can use a fork or a potato masher)
- In a bowl, combine the mashed 'ulu, flour, baking powder, salt, pepper, and any additional spices you like.
- Add the egg and, milk, and chopped green onions (or herbs)
- Mix until everything is well combined and forms a thick batter
Fry the Fritters:
- Heat oil in a frying pan over medium-high heat
- Drop spoonsfuls of the batter into the hot oil, flattening slightly to form small patties
- Cook each side for 2-3 minutes, or until golden brown and crispy
Drain and Serve:
- Place the cooked fritters on a paper towel to drain excess oil
- Serve hot with your favorite dipping sauce, like crispy aioli, coconut chutney, or sweet chili sauce
