Ulu Fritters

Ingredients:

  • 2 cups thawed and mashed 'ulu (breadfruit)
  • 1/2 cup all-purpose flour (or a gluten-free alternative)
  • 1/4 cup chopped green onions or herbs (like cilantro or parsley)
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg (or egg replacement)
  • 1/4 cup milk or alternative milk
  • Optional: spices (e.g., paprika, garlic powder) for extra flavor
  • Oil for frying (e.g., vegetable oil or coconut oil)

Directions: 

Prepare the 'Ulu:

  • Thaw and mash the 'ulu until it reaches a smooth consistency (you can use a fork or a potato masher)
Mix the Batter:
  • In a bowl, combine the mashed 'ulu, flour, baking powder, salt, pepper, and any additional spices you like.
  • Add the egg and, milk, and chopped green onions (or herbs)
  • Mix until everything is well combined and forms a thick batter

Fry the Fritters:

  • Heat oil in a frying pan over medium-high heat
  • Drop spoonsfuls of the batter into the hot oil, flattening slightly to form small patties
  • Cook each side for 2-3 minutes, or until golden brown and crispy

Drain and Serve:

  • Place the cooked fritters on a paper towel to drain excess oil 
  • Serve hot with your favorite dipping sauce, like crispy aioli, coconut chutney, or sweet chili sauce

Note: these 'ulu fritters make a great snack, appetizer or side dish!
