Tortang Talong

Ingredients:

  • Eggplant
  • Eggs
  • Salt and Pepper
  • Optional: chopped onions, tomatoes, a cooked ground protein
  • Cooking oil

Directions:

Prepare the Eggplant:

  1. Grill or roast the eggplant over an open flame, on a grill, or in an oven until the skin is charred and the flesh is soft.
  2. Once cooked, let the eggplant cool, then peel off the skin.
  3. Flatten the eggplant using a fork, keeping the stem intact.

Prepare the Egg Mixture:

  1. Beat the eggs (or vegan egg mixture) in a bowl and season with salt and pepper.
  2. Optional: add chopped onions, tomatoes. and/or a cooked ground protein if you prefer.

Dip and Fry:

  1. Heat some cooking oil in a pan over medium heat.
  2. Dip the flattened eggplant into the egg mixture, ensuring itʻs well-coated.
  3. Fry the eggplant in the hot oil until golden on both sides, about 2-3 minutes each side.

Serve:

  1. Serve the tortang talong hot with a side of rice and dipping sauce (ex; ketchup, soy sauce, vinegar with garlic, etc)
