Tortang Talong
Ingredients:
- Eggplant
- Eggs
- Salt and Pepper
- Optional: chopped onions, tomatoes, a cooked ground protein
- Cooking oil
Directions:
Prepare the Eggplant:
- Grill or roast the eggplant over an open flame, on a grill, or in an oven until the skin is charred and the flesh is soft.
- Once cooked, let the eggplant cool, then peel off the skin.
- Flatten the eggplant using a fork, keeping the stem intact.
Prepare the Egg Mixture:
- Beat the eggs (or vegan egg mixture) in a bowl and season with salt and pepper.
- Optional: add chopped onions, tomatoes. and/or a cooked ground protein if you prefer.
Dip and Fry:
- Heat some cooking oil in a pan over medium heat.
- Dip the flattened eggplant into the egg mixture, ensuring itʻs well-coated.
- Fry the eggplant in the hot oil until golden on both sides, about 2-3 minutes each side.
Serve:
- Serve the tortang talong hot with a side of rice and dipping sauce (ex; ketchup, soy sauce, vinegar with garlic, etc)
