Stuffed Swiss Chard
Ingredients:
- 1/2 cup cooked rice (or quinoa)
- 2 tbsp crumbled feta or goat cheese (optional)
- 1 tbsp chopped fresh herbs (parsley, dill, or garlic chives)
- 1 tbsp toasted pine nuts or chopped walnuts (optional)
- 1/4 cup cooked lentils or ground meat (beef, lamb, or turkey)
- 1 small garlic clove, minced
- Salt and pepper to taste
- 4 large Swiss chard leaves (stems trimmed and reserved for another use)
- 1 tsp olive oil
- 3/4 cup canned crushed tomatoes (or 1 fresh tomato, finely chopped)
- 1/4 tsp dried oregano or Italian seasoning
Directions:
- Prepare the Swiss Chard Leaves: Trim the stems and blanch the leaves into boiling water for 30 seconds. Transfer to an ice water bath, pat dry, and set aside
- Make the Filling: Mix the cooked, feta (if using), herbs, nuts, lentils or meat, and minced garlic in a bowl. Season with salt and pepper to taste.
- Stuff and Roll: Place 1-2 tbsp of filling near the base of each leaf. Fold in the sides and roll tightly, like a burrito.
- Prepare the Sauce: Heat the olive oil in a small pan over medium heat. Add the crushed tomatoes and oregano. Season with salt and pepper. Simmer for 5-7 minutes.
- Cook the Stuffed Chard: Spread a bit of tomato sauce in the bottom of a small baking dish or skillet. Place the rolls seam-side down and pour the remaining sauce over them. Cover and simmer on low heat for 15-20 minutes or bake at 375*F (190*C) for 15 minutes.
