Sesame Green Beans and Bok Choy

Ingredients:

  1. 8 baby bok choy, or one large bunch bok choy
  2. 1 pound green beans, trimmed
  3. 2 tbsp sesame seeds, toasted
  4. Generous pinch of salt (or as desired)

Directions:

  1. Partially fill a large wide pot with water and bring to a boil. 
  2. Trim ends from bok choy. 
  3. Quarter bok choy lengthwise. If bunches are very small, slice in half. 
  4. Rinse greens thoroughly and pat dry. 
  5. When water comes to a boil. add beans and cook until just tender - 1-3 minutes. 
  6. Add Bok choy to pot. 
  7. Cook, uncovered, stirring occasionally, until beans and Bok choy are tender, crisp and bright green - 2-3 minutes. 
  8. Drain vegetables then return them to the pot. 
  9. Set the pot on the burner and stir vegetables until any excess liquid is evaporated. 
  10. Drizzle with sesame oil and sprinkle with sesame seeds and salt. Stir to evenly mix. Serve immediately.
