Purple Sweet Potato Mash

Ingredients:

• Purple sweet potato
• Butter
• Coconut milk or cream (to your liking)
• Salt
• Honey or maple syrup (for sweetness)

Directions:

1. Steam or heat up sweet potatoes until soft
2. Mash with a bit of butter once the potatoes have softened
3. Add in coconut milk or cream, salt and a touch of honey or maple syrup
