Pulled Mushroom Sandwich
Ingredients:
- 6 oz Ali'i (King Oyster) mushrooms
- 1 tbsp olive oil
- 1/4 medium onion, diced
- 1 garlic clove, minced
- 1/4 tsp smoked paprika
- 1/4 tsp garlic powder
- 2-3 tbsp barbecue sauce
- 1 tsp soy sauce
- Salt and pepper to taste
- 2 soft buns or rolls
- Optional toppings: lettuce, tomato, pickles, coleslaw
Directions:
Prepare the Mushrooms:
- Clean the mushrooms with a damp cloth
- Shred the mushroom stems and caps into thin strips using a fork
Sauté the Aromatics:
- Heat the olive oil in a skillet over medium heat
- Add the diced onions and cook until translucent (about 3-4 minutes)
- Add the minced garlic and cook for another minute
Cook the Mushrooms:
- Add the shredded mushrooms to the skillet
- Cook for about 7-8 minutes
- Stir occasionally until the mushrooms are browned and tender
Season:
- Sprinkle the smoked paprika and garlic powder over the mushrooms
- Stir to combine and cook for an additional minute
Add BBQ Sauce:
- Pour in the barbecue sauce and soy sauce
- Stir to coat the mushrooms evenly
- Reduce heat to low and let the mixture simmer for about 3-4 minutes
Assemble the Sandwiches:
- Toast the buns (if desired)
- Place a portion of the pulled mushroom mixture onto each bun and add your preferred toppings
Note: This will make 2 sandwiches
