Pulled Mushroom Sandwich

Ingredients:

  • 6 oz Ali'i (King Oyster) mushrooms
  • 1 tbsp olive oil
  • 1/4 medium onion, diced
  • 1 garlic clove, minced
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 2-3 tbsp barbecue sauce
  • 1 tsp soy sauce
  • Salt and pepper to taste
  • 2 soft buns or rolls
  • Optional toppings: lettuce, tomato, pickles, coleslaw

Directions:

Prepare the Mushrooms:

  1. Clean the mushrooms with a damp cloth
  2. Shred the mushroom stems and caps into thin strips using a fork

Sauté the Aromatics:

  1. Heat the olive oil in a skillet over medium heat
  2. Add the diced onions and cook until translucent (about 3-4 minutes)
  3. Add the minced garlic and cook for another minute

Cook the Mushrooms:

  1. Add the shredded mushrooms to the skillet
  2. Cook for about 7-8 minutes
  3. Stir occasionally until the mushrooms are browned and tender

Season:

  1. Sprinkle the smoked paprika and garlic powder over the mushrooms
  2. Stir to combine and cook for an additional minute

Add BBQ Sauce: 

  1. Pour in the barbecue sauce and soy sauce
  2. Stir to coat the mushrooms evenly
  3. Reduce heat to low and let the mixture simmer for about 3-4 minutes

Assemble the Sandwiches:

  1. Toast the buns (if desired)
  2. Place a portion of the pulled mushroom mixture onto each bun and add your preferred toppings

Note: This will make 2 sandwiches
