Carrot Pickles
Ingredients:
- Carrots
- 1 cup vinegar
- 1 cup water
- 2 tbs sugar
- 1 tbs salt
- Garlic
- Peppercorns
- Chili flakes
- Mustard seed (optional)
Directions:
- Cut the carrots into sticks or thin rounds, depending on your preference.
- In a small saucepan, combine the vinegar, water, sugar and salt.
- Heat until the sugar and salt are dissolved.
- Remove from heat and let cool slightly.
- Place the carrots in a clean glass jar (or jars).
- Add garlic, peppercorns, chili flakes and mustard seeds (if using).
- Pour the warm brine over the carrots, ensuring they are fully submerged.
- Let cool to room temperature, seal the jar tightly with a lid, then refrigerate.
- Wait overnight and enjoy but for the best flavor, wait at least 24 hours before eating.
- These pickled carrots can be stored in the refrigerator for up to 2 weeks.
