Carrot Pickles

Ingredients:

  • Carrots
  • 1 cup vinegar
  • 1 cup water
  • 2 tbs sugar
  • 1 tbs salt
  • Garlic
  • Peppercorns
  • Chili flakes
  • Mustard seed (optional)

Directions:

  1. Cut the carrots into sticks or thin rounds, depending on your preference.
  2. In a small saucepan, combine the vinegar, water, sugar and salt.
  3. Heat until the sugar and salt are dissolved.
  4. Remove from heat and let cool slightly.
  5. Place the carrots in a clean glass jar (or jars).
  6. Add garlic, peppercorns, chili flakes and mustard seeds (if using).
  7. Pour the warm brine over the carrots, ensuring they are fully submerged.
  8. Let cool to room temperature, seal the jar tightly with a lid, then refrigerate.
  9. Wait overnight and enjoy but for the best flavor, wait at least 24 hours before eating.
  10. These pickled carrots can be stored in the refrigerator for up to 2 weeks.
