Veggie Spotlight: Purslane
This week a few lucky customers will receive purslane in their CSA share! Because it is harvested in such small batches, we are only able to do it as a small portion of our mystery item, but we are hoping to take it in more often so that everybody gets to try this boutique salad green at some point.
Popular in salads in Europe, purslane has a lemony taste and a crisp, refreshing texture. As delicious as purslane is, it really shines for its health benefits. Purslane is a natural and exceptionally rich source of the antioxidant Vitamin E as well as Omega-3 Fatty Acids which are known to improve brain health and reduce heart disease.
Try whipping up a salad with chopped purslane, cucumber, cilantro, watercress and parsley. Dress with some lemon juice or plain yogurt-based dressing or simply sprinkle your salad with toasted sesame oil and shoyu. You can add any other veggies or toppings that you think would match this flavor profile - try fresh corn, asparagus, thinly sliced radishes, sunflower seeds - get creative!
